The true teas are all of the teas that come from the Camellia sinensis plant, which is also known as the tea plant. This includes black, green, oolong and white teas. These types are distinguished by level of processing and all have very different health benefits.
Herbal teas include all teas that are not true teas. Because it does not come from the tea plant, herbal teas are technically not teas, but rather herbal infusions or tisane. Some popular herbal teas include rooibos, mate, mint and chamomile teas.

Black Tea: Boil water, steep 3 -5 minutes
Green Tea: Bring water to under boil, steep 2 - 3 minutes
Oolong Tea: Bring water to under boil, steep 2 - 5 minutes
White Tea: Bring water to under boil, steep 2 - 3 minutes
Herbal & Rooibos: Boil water, steep 5 - 7 minutes
Mate Tea: Boil water, steep 3 - 7 minutes
Teas should be stored away from the glow of air at room temperatures. To improve self life length storing in glass jars or containers is recommended.
